Produce
Farmers Market: Products at farmers' markets are renowned for being locally-grown and very fresh. Proponents of farmers' markets reason that since locally-grown produce does not travel as far to get to your table, the difference in mileage saves fossil fuels, allows farmers to pick produce at the peak of flavor, and preserves the nutritional content of fresh produce.
Organic: of, relating to, or derived from living matter : organic soils. (of food or farming methods) produced or involving production without the use of chemical fertilizers, pesticides, or other artificial agents.
Fresh: recently created or experienced and not faded or impaired (of food) recently made or obtained; not canned, frozen, or otherwise preserved.
Local: belonging or relating to a particular area or neighborhood, typically exclusively so.
Sustainable: Ecology (esp. of development, exploitation, or agriculture) conserving an ecological balance by avoiding depletion of natural resources.
Specialty Meats
Waygu: [wah-goo] The word Wagyu translated means, Japanese-style cattle. Wagyu produce consistently marbled, low-cholesterol 100% hormone free beef. Recognized as the world’s finest, unmatched for flavor, tenderness and overall eating quality.
Dry Aged Sirloin: During dry-aging, steaks are kept on racks in a special room with temperature, humidity and air circulation carefully controlled. The meat may lose up to 25% of its weight, which is part of the process of concentrating the flavor. That's a good reason why dry-aged beef is increasingly rare, delicious, and more costly than fresh-packed beef.
House Smoked Bacon: Fresh Niman Ranch Pork Belly, Cured over three days then slowly smoked with sweet oak chips. This process gives the bacon a distinct sweet- smoky flavor.
Cervena Venison: Premium farmed venison from New Zealand. Cervena is distinguished from all other venison by the trademarked assurance that the meat has been naturally raised and processed in licensed Cervena plants according to internationally recognized quality standards.
